Stuffed Peppers

Combine Ingredients:
  • 5 cups cooked brown rice
  • 2 zucchini finally chopped
  • 1/4 cup chopped fresh mint
  • 1/3 cup chopped parsley
  • 2 chopped Romano tomatoes
  • 1 1/2 cups carrots finally chopped
  • 3 minced garlic cloves
  • 1 yellow onion
  • 1 fresh squeezed lemon
  • Herbamare to taste   
Stuff six to seven peppers with mixture, add 2 cups of water in a pan and placed the stuffed peppers in the water. Cook in a pressure cooker for 20 minutes on medium heat or in a regular covered cooking pan, on medium, for  40 min.
