Healthy Red Borscht Soup & Tofu Sour Cream

Borscht Soup Ingredients:
  • 5 - 6 beets peeled & diced
  • 3 chopped carrots
  • 3 cups of shredded cabbage
  • 6 cups of spring water
  • 3 tablespoons lemon juice
  • 1/2 cup of fresh chopped dill
  • 1 chopped white onion
First, saute the onion in a sauce pan with a dash of olive oil and celtic salt. Add the rest of the ingredients to your sauce pan except for the lemon juice. Cook 25 - 30 minutes or until beets are tender & add lemon juice. Can be served hot or cold.
