Lentil Salad:

• 3 cups of cooked french lentils
• 2/3 cup fresh chopped parsley
• 1 small red onion
• 2 tablespoons extra virgin olive oil
• 2 tablespoons lemon juice
• salt to taste with Sel de Mer or celtic salt
